Chocolade is een mengsel van cacaopoeder, cacaoboter en suiker. Rauwe cacao heeft een hoog gehalte aan flavanolen (antioxidanten), die een positief effect op de bloedvaten hebben.
De stoffen theobromine en cafeïne in chocolade hebben een opwekkend effect, maar dat is zwakker dan het effect van koffie. Chocolade bevat ook stoffen die de stemming kunnen verbeteren, maar in zo’n lage concentratie dat het effect niet meetbaar is.
Het wordt afgeraden om meer chocolade te eten om hart- en vaatziekten te voorkomen. Naast gunstige stoffen bevat chocolade namelijk ook veel verzadigd vet. Dit verhoogt het risico op hart- en vaatziekten juist. Ook zitten er veel calorieën in chocolade. Dat chocolade puistjes veroorzaakt is nooit aangetoond.
Omschrijving
Chocolade wordt gemaakt door cacaopoeder te mengen met cacaoboter en suiker. Aan dit mengsel kunnen nog andere ingrediënten worden toegevoegd, zoals melkpoeder, noten, vruchten of smaakstoffen.
Het maken van cacaopoeder en cacaoboter
Cacaopoeder wordt gemaakt uit de zaden van de cacaoboom. Bonen worden gefermenteerd en daarna in de zon gedroogd en in de fabriek gebrand en gemalen. Zo ontstaat een dikvloeibare cacaomassa. De cacaoboter wordt uit de cacaomassa geperst en de overgebleven droge koek wordt gemalen tot cacaopoeder.
Het maken van chocola
Na het mengen van cacaopoeder, cacaoboter en suiker wordt de chocolademassa nog 12 uur tot 4 dagen lang op 80°C gekneed in een verwarmde trommel. Daarna wordt het in vormen gegoten.
Soorten chocola
Er zijn verschillende varianten van chocolade, zoals:

Er bestaat ook bittere en extra bittere chocolade. Het percentage cacao en cacaoboter van bittere chocolade en extra bittere chocolade is niet wettelijk vastgelegd.
Gezondheidseffecten
Aan chocolade worden zowel positieve als negatieve gezondheidseffecten toegeschreven. Niet altijd kloppen de beweringen. Hieronder staat van verschillende effecten wat klopt en wat niet.
Kan chocola hart- en vaatziekten helpen voorkomen?
In cacao en dus in chocolade zitten flavanolen. Flavanolen zijn antioxidanten, die weefselschade voorkomen en mogelijk het risico op kanker en hart- en vaatziekten kunnen verlagen. Bittere en extra bittere chocolade heeft een hoog gehalte aan flavanolen. Tijdens het branden van de cacaobonen en het bereiden van chocolade gaat meer dan de helft van de flavanolen verloren. ‘Rauw cacaopoeder’ en ‘rauwe chocolade’ heeft daarom een veel hoger gehalte aan flavanolen.
Onderzoek heeft aangetoond dat het dagelijks innemen van meer dan 200 milligram flavanolen uit cacao een positief effect heeft op de elasticiteit van de bloedvaten. Dit komt neer op 10 gram extra bittere chocolade of chocolade gemaakt van rauwe cacao, of 2,5 gram rauwe cacaopoeder. Ook zijn in onderzoek mensen die chocolade eten vergeleken met mensen die geen chocolade eten. Mensen die chocolade eten hadden minder hart- en vaatziekten. Het gaat hier om kleine hoeveelheden chocolade. De studies laten niet zien of iemand daadwerkelijk gezonder wordt door meer chocolade te gaan eten.
Chocolade bevat ook veel verzadigd vet (ongeveer 20 gram op de 100 gram). Verzadigd vet verhoogt het cholesterolgehalte van het bloed en dat vergroot juist de kans op hart- en vaatziekten. Er wordt wel gezegd dat het verzadigde vetzuur stearinezuur dat in chocolade zit, niet slecht is voor je hart en vaten. Maar hiervoor is weinig wetenschappelijk bewijs.
Er is onvoldoende bewijs om te kunnen concluderen dat chocolade hart- en vaatziekten kan helpen voorkomen.
Heeft chocola effect op alertheid en stemming?
De stoffen theobromine en cafeïne in cacao zorgen voor een verhoogde alertheid na het eten van chocolade, hoewel het effect minder sterk is dan van koffie.
Er zitten stoffen in cacao die de stemming kunnen verbeteren, namelijk tryptofaan, beta-fenylethylamine en endo-cannabinoïden (cannabisachtige stoffen). Maar deze stoffen zijn in chocolade in veel te lage hoeveelheid aanwezig om een meetbaar effect op de stemming te hebben.
Is chocola verslavend?
Doordat de stoffen die de alertheid en stemming kunnen verbeteren slechts in zulke kleine hoeveelheden voorkomen, is chocolade niet verslavend. Wel zijn er door de specifieke combinatie van smaak en mondbeleving van chocolade veel liefhebbers van chocolade.
Kan chocola migraine veroorzaken?
Chocolade wordt vaak genoemd als oorzaak van migraine. Dat zou te wijten zijn aan bepaalde stoffen (biogene aminen) in de chocolade die een overgevoeligheidsreactie kunnen veroorzaken. Maar die stoffen zitten maar in hele kleine hoeveelheden in chocola. In wetenschappelijk onderzoek kon geen verband worden aangetoond tussen migraine en biogene aminen in de voeding.
Verergert chocola acne (puistjes)?
Veel mensen met acne (puistjes) zijn van mening dat chocolade acne erger maakt. In wetenschappelijke studies wordt geen verband gevonden tussen de hoeveelheid chocolade (tot 10 maal zoveel cacao als in een chocoladereep) en de frequentie of ernst van acne.
Maakt chocola je dik?
Een reep chocolade van 75 gram bevat 400 tot 450 calorieën (kcal), dat is evenveel als 3 belegde boterhammen en meer dan wat een volwassen vrouw op een dag aan extra’s (zoals snoep, snacks en frisdrank) maximaal wordt geadviseerd. Bij het regelmatig eten van chocolade neemt de kans op overgewicht dan ook toe.
Voedingsadvies
Cacaopoeder, pure, extra bittere chocolade, rauwe cacaopoeder en rauwe chocolade hebben een gunstig effect op de bloedvaten door het hoge gehalte aan flavanolen (antioxidanten). Maar toch wordt het afgeraden om meer chocolade te gaan eten om hart- en vaatziekten te voorkomen. Chocolade bevat namelijk ook veel verzadigd vet. Dit verhoogt het risico op hart- en vaatziekten juist.
Verder zitten er erg veel calorieën in chocolade. Om overgewicht te voorkomen is het daarom aan te raden niet te veel chocolade te eten.
Mensen met acne of migraine hoeven chocolade niet te mijden.
Duurzaamheidsaspecten
Cacao groeit in tropische gebieden, voornamelijk in West Afrikaanse landen Ghana en Ivoorkust. Bijna alle cacao komt van kleinschalige boeren, waarvan er 5 tot 6 miljoen zijn.
Milieu en natuur
Van de tropische gewassen heeft cacao de minste milieudruk, omdat de plant het beste groeit in de schaduw van tropisch bos en weinig mest en bestrijdingsmiddelen nodig zijn. In feite werken de meeste boeren biologisch. Wel zorgt de groeiende vraag op bepaalde plekken voor ontbossing, erosie en verlies aan biodiversiteit.
De verwerking van cacaobonen tot cacaoboter, cacaopoeder en chocolade is een energie-intensief proces.
Eerlijke handel
Een groot probleem is de wisselende en lage prijs die de boeren voor cacao krijgen. Ze verdienen vaak niet meer dan $2 per dag. Er is gebrek aan onderwijs, gezondheidszorg, elektriciteit en schoon water. De armoede werkt kinderarbeid in de hand. De boeren zijn afhankelijk van een paar grote spelers in de markt die de cacao inkopen en verwerken.
Keurmerken
Er is chocolade te koop met een Fairtrade keurmerk. Fairtrade is een initiatief om iets aan deze situatie te doen, door via een vaste handelsrelatie de boeren een minimumprijs te bieden. Verder krijgen ze bovenop de marktprijs een extra premie bovenop de prijs en krijgen ze training en advies.
Daarnaast is er chocolade verkrijgbaar met Utz certified en Rainforest Alliance keurmerken. die vooral terug te vinden zijn op producten als chocolademelk en hagelslag. Zij garanderen geen minimumprijs, maar werken wel aan de verbetering van arbeidsomstandigheden en omgeving.
De cacaobranche heeft afgesproken dat in 2015 50 procent van de cacao in Nederland duurzaam moet zijn.
