Bekleed een ovenschaal met bakpapier en zet apart.
Doe in een middelgrote kom de gehakte zoete aardappelen, knoflook, nootmuskaat en olijfolie en doe het mengsel vervolgens in de overschaal.
Bak gedurende 20 minuten of tot ze bruin zijn en verwijdere uit de oven.
Laat het afkoelen gedurende 10 minuten
Maak een bedje van spinazie op twee borden en verdeel dan de zoete aardappelen erop.
Kruid met gemalen zwarte peperkorrels en garneer met gehakte pistachenoten.
